Granola Powerballs

I totally improvised these little balls of heaven a few days ago. Everyone needs to try them! SO yummy! And so filling! Perfect for a post-workout snack or an anytime snack really! (Also, if you have a better name for them…I’m totally okay with changing the lame name I currently am using!)

Prep Time: 10 minutes

Cook Time: 1 hour

Ingredients: 

**Peanut Butter- the amount is up to you. I used a whole small jar from Wegmans. (Crunchy or smooth would work)

Your favorite granola (whole bag) I used Nature Valley Honey & Oats Protein Granola

3 tablespoons of honey

4 tablespoons of milk (I used 2%, you can substitute any kind)

10 Guittard Organic Bittersweet Chocolate Baking Wafers (Non-GMO, Peanut Free, Fair Trade Certified! This stuff is the bomb!)  [Amount here is also up to you- I love chocolate so…]

1 tablespoon of Espresso Powder (Any Brand)

Other things you’ll need:

1 Mixing bowl

1 Spoon

1 Sheet of aluminum foil

1 gallon Zip Loc bag

1 cookie sheet

Directions: 

  1. Place foil on cookie sheet
  2. Mix Peanut Butter, Honey, Milk, and Espresso Powder in your mixing bowl
  3. Melt Chocolate Wafers in the microwave until completely melted
  4. Pour melted chocolate into your Peanut Butter base and mix until well blended
  5. Take your granola and pour it into a gallon zip loc bag. Seal it, and lay it flat. Use a spoon to crush the granola into smaller pieces.
  6. Last but not least, pour in the whole zip loc bag of granola and stir together
  7. Take your Powerball mixture and start hand rolling little balls and placing them on the foil
  8. Place finished powerballs in the refrigerator for 1 hour.

After the one hour in the fridge, they are ready to eat!

**The beauty of this little treat, is you can customize it to fit your specific needs. Allergic to peanut butter? No problem! Use any other PB substitute you would like! You could also add any mixed nuts or even protein powder to really turn this into a super powerball!

Roasted Potatoes with Garlic Aioli

I made these for Christmas Eve dinner at our house and we couldn’t stop eating them!!! SO GOOD!!! And SO easy! I was blown away!

Ingredients: 

1 lb bag of potatoes, washed and chopped into smaller cubes

1 onion, minced

1 cup olive oil

2 tablespoons of oregano (Dominican is the best 😉 )

3 tablespoons of garlic powder

1-2 tablespoons of sea salt

(Honestly, if you think it needs more or less garlic/ oregano, adjust it to your taste! I love heavier seasoning, so this reflects it!)

Prep:

Wash and cube potatoes and place in a gallon Ziploc bag; set aside.

Mince onion; set aside.

Gather all seasonings and olive oil; get a smaller bowl and mix oil, seasonings, and minced onion together.

Pour aioli over potatoes and seal Ziploc; all potatoes should be coated with the aioli (add extra seasoning if needed) Shake the bag if necessary to spread.

Place in refrigerator overnight. (This step can be skipped, but the potatoes do taste best when they have time to soak in the flavor) 

Cooking: 

Preheat oven to 375.

Place foil on your favorite cookie sheet and pour the potatoes and aioli onto the sheet.

Place the potatoes in the oven for approx. 20 minutes.

After baking for 20 minutes, turn the oven to Broil.

Leave potatoes broiling until they are golden brown and crispy. ( I left mine broiling for 15 minutes)

Take them out and enjoy!

For some extra flavor, you can sprinkle a bit of parmesan cheese over the top!
